Roasted Root Vegetables with Rosemary and Thyme

3 medium size red potatoes
4 carrots cut in 1" pieces or 10-12 baby carrots
2-3 parsnips cut in 1" pieces
1 butternut squash, peeled and cut into 1" pieces
1 large yellow onion, peeled and diced
5 sprigs fresh thyme, roughly chopped
2 sprigs fresh rosemary, roughly chopped
Olive oil




Preheat oven to 425F degrees.

Place vegetables on a parchment-lined sheet pan (I completely forgot to add the paper).  Sprinkle with salt, pepper and chopped herbs.  It already smells wonderful!!

Add olive oil and combine.  Taste a carrot to see if it needs more salt.  Roast uncovered for 1 hour, stirring 1 or 2 times.  

Time to admire. . . .

EAT!!

I dared to use the oven on this hot, muggy Summer day and I didn't fret one bit!  This recipe was so worth it.  Hubby is ready for me to make more tomorrow and I can't wait.  Prepping it is half the fun :)

Roasted Butternut Squash

1 Butternut squash, peeled and cut into med size squares
Canola oil
Salt & pepper to taste
Butter

Turn broiler on high.

Place cut squash pieces on cookie sheet, drizzle with canola oil, sprinkle salt & pepper.  Use your hands to cover each piece with plenty of oil, salt and pepper. 

Place in oven for 20 minutes or until soft when poked with a sharp knife and pieces are browned

Place in serving dish while it's still hot.  Add butter to your liking and stir gently and serve

Very, very simple recipe to do.  Hubby loves, loves, loves Butternut Squash.  This is the first time I've cooked it like this and he and grandma absolutely loved it.  I wasn't a fan of squash growing up but this squash has grown on me and I have to say that this dish was amazing.  Each piece covered in butter and just enough salt with a nutty flavor from the squash simply melted in my mouth.  This has now become a big favorite and will be the only way I'll cook this squash from now on.  I sent hubby to the store this morning and he came back with another Butternut Squash, even when it wasn't on my grocery list.  I think he's giving me a hint ;)
