1 1/4 cups all purpose flour
1 tsp baking soda
1 tsp salt
2 sticks (1 cup) unsalted butter, softened
1 1/4 cups brown sugar, packed
1/4 cup granulated sugar
2 eggs
1 tsp vanilla extract
3 cups sweetened flaked coconut
2 cups semi-sweet chocolate chips
Preheat oven to 375F degrees.
Combine the flour, salt and baking powder. You don't have to sift together like I did. Can't really tell you why I sifted it together but it didn't hurt.
In a separate mixing bowl, cream the butter, brown and granulated sugar together
Add each egg one at time, making sure to combine well before adding the other
Add the vanilla and combine
Slowly add the flour
Add the chocolate chips (I didn't have enough chocolate chips so I also had to add some mint choc. chips which is why you see some green ones). Manually combine into the mixture
Finally add the coconut, manually stir in with spatula, combine well.
Using a tablespoon, scoop and place on ungreased cookie sheet.
Bake for 10-12 minutes, until edges are a golden brown
Carefully place on wire rack to cool
They're ready to eat anytime with a tall glass of cold milk! Enjoy!
