One 28oz. can whole tomatoes
Two 10oz. cans Rotel (Mexican style canned tomatoes)
1/2 fresh cilantro
1/4 chopped onion
1 clove garlic, minced
1 whole jalapeno, quartered and sliced thin keeping the membrane and seeds intact
1/4 tsp. cumin
1/4 tsp. salt
1/4 tsp. sugar
1/2 whole lime, juiced
To a food processor or blender add the whole tomatoes
and the diced tomatoes, onions
cilantro,
the jalapenos and garlic
the salt and sugar
cumin
and the lime juice
Pulse and blend until your reach desired consistency. I personally do not like mine with large chunks.
But a little lumpy like this.
Ree Drummond on her show on FoodTV, "The Pioneer Womans" this past Saturday made a lot of recipes that sparked my interest. Any time it's similar to Tex-Mex, Mexican, Southwest style recipes, I make sure I'm attentive. When she mentioned that she's very picky about her salsa I wanted to make sure that I listened because I had yet to find a good salsa recipe. She showed how simple it was to make so I definitely had to try it today. Well, I have to agree, this recipe is hands down the best salsa I have made. That's why love the Pioneer Woman, she's a cook after my own heart. I will be using this recipe from now on.

I love salsa and will be sure to try this. I think the fresh cilantro is the key to a great taste.
