Red Velvet Brownies and then Some

1 (4 oz.) bittersweet chocolate baking bar, chopped
3/4 cup butter
2 cups sugar
4 large eggs
1 1/2 cups all-purpose flour
1 (1 oz.) bottle red liquid food coloring
1 1/2 tsps. baking powder
1 tsp. vanilla extract
1/8 teaspoon salt
Small-batch Cream Cheese Frosting
Garnish:  white chocolate swirls

Preheat oven to 350F degrees.

Line bottom and sides of a 9x9 inch square pan with aluminum foil, allowing 2 to 3 inches to extend over sides

Chop the bittersweet chocolate baking bar into small pieces

Microwave chocolate and butter in a large microwave-safe bowl at HIGH 1 1/2 to 2 minutes or until melted and smooth, stirring at 30-second intervals.

Whisk in the sugar

Add eggs, one at a time, whisking just until blended after each addition.

Combine the flour, baking powder and the salt in a separate bowl.  Gently stir in flour mixture.

Add the red food coloring and ...

blend well until the mixture is uniform in color

Pour mixture into prepared pan and bake for 44-48 minutes or until a wooden pick inserted in center comes out with a few moist crumbs.  

Cool completely on a wire rack (about 2 hours)

Lift brownies from pan, using foil sides as handles; gently remove foil.

Spread Small Batch Cream Cheese Frosting
1 8 oz. softened cream cheese
3 tbsps. softened butter
1 1/2 cups powdered sugar
1 tsp. vanilla
Beat cream cheese and butter at medium speed with an electric mixer until creamy.  Gradually add powdered sugar and salt beating until blended.  Stir in vanilla.

Spread frosting on top of brownies.

Get fancy if you'd like, or not

With a long sharp knife, cut into 16 square pieces

and enjoy!

These were our desserts for our Easter meal.  Our daughter made the other two, top left: is her Hummingbird Cake (a classic southern cake according to the March issue of Southern Living).  Top right: Banana Pudding Cookies.  I'll have to ask her for the recipe as I couldn't find it.  Bottom center, Red Velvet Brownies.  Everything was so delicious and we're fortunate to have some leftovers, yum!

This Easter weekend went by too fast, I enjoyed every minute and am thankful for my family, friends and faith.  ~ Savoring every moment!
