Copycat from Martha Stewart's cookie website
1 pound unsalted butter
1 3/4 cups granulated
sugar
2 1/4 cups packed
light-brown sugar
4 large eggs
3 cups plus 2
tablespoons pastry flour
3 cups bread flour
1 tablespoon salt
2 teaspoons baking
powder
2 teaspoons baking soda
1 tablespoon pure
vanilla extract
2 pounds Jacques Torres House (60 percent
cocoa) Chocolate or other best-quality semisweet or bittersweet chocolate,
coarsely chopped
Preheat oven to 350F degrees
Combine the sugars and the butter...
...in a mixing bowl with the paddle attachment, mix until good and creamy
Scrape the sides often
Add the eggs but one at a time and make sure to incorporate them thoroughly before adding the next one
Slowly and gently add the flour, salt, vanilla, baking powder and baking soda
This is a BIG batch of cookie dough - my poor mixer was sounding old.
Fold in the chocolate pieces...
...until well incorporated
I used my ice cream scoop twice to make one large cookie. Bake for 13-15 minutes or until lightly brown, do not overbake
Let cool on pan for a few minutes and then remove cookies to a cooling rack
Give away as gifts but do keep some for yourself and your family
So what does one say when hubby says these are the best chocolate chip cookies he's ever eaten??
