New England Brown Bread


Start early in the day if you want this for dinner.  Pre-heat oven to 300F degrees. 

DRY INGREDIENTS
1/2 cup ground stone-ground cornmeal
1/2 cup rye flour
1/4 cup whole wheat flour
1/4 cup all purpose flour
1/2 tsp. kosher salt
1/2 tsp. baking powder
1/4 tsp. baking soda
WET INGREDIENTS
1/2 cup of unsulfured molasses
1/2 cup of buttermillk
1 egg lightly beaten

Butter for greasing and serving

In a large bowl whisk together all the dry ingredients

In another bowl, whisk the wet ingredients

 Pour wet ingredients into the dry ingredients.

 Stir with a spoon until just combined.

 Transfer to a well greased meatloaf pan and spread evenly.  (I didn't have a 13 oz. empty can nor could I find one).  I made two loaves because I know one won't be enough.

Cover with foil and place in a large pan, large enough to hold 6 cups of water and to place on the stovetop.  (I used my turkey pan without the rack)

Place the large pan over the stovetop and bring the water to boil.  Once the water boils, transfer the pan into the pre-heated oven, yes, the whole kit and kaboodle.  Bake for 2 1/2 - 3 hours, until toothpick inserted in the middle of the loaf come out clean.

When I took it out of the oven, I couldn't wait to let it cool.  I had to slather a slice with butter and taste it.  I also told hubby who was already in bed reading that I would bring him a slice.  He said it tasted just like the bread he grew up with....score!!

I LOVE, love, love bread.  It is my weakness.  When we go out to eat at Outback Steakhouse (OS), it takes everything to hold me back from eating the whole loaf of bread they serve before the entrees arrive.  I have often wondered what kind of bread it was and why I never saw it sold at any bakery or bread section in our local grocery store.  I somehow bumped onto the website that had this recipe.

  I told hubby I wanted to make some and he out of nowhere comes out and said he grew up eating "New England Brown Bread" but only during the holidays because it was so expensive.  What??  I never knew!  After almost 30 years of marriage, I'm still finding out all kinds of things about my hubby.  This bread is for real, it's solid baked goodness.  Nothing compare to what OS serves.

I had some with my coffee this morning before I sat down to blog.  I just worked up an appetite. . . . . time for seconds.

  1. This looks delicious... and much better than the can version. My hubby grew up eating brown bread too. In his home it was served with hotdogs and beans! Thank you for sharing the recipe!
