Boston Creme Pie Minis and Waldorf Salad by Elise

Boston Creme Pie Minis*
1 pkg yellow cake mix (two layer size)
1 cup cold milk
1 pkg. (4 serving) Jello vanilla flavored instant pudding
1 1/2 cups Cool Whip topping divided
4 squares Baker's semi-sweet chocolate
After the muffins have baked and cooled, slice each one in half

Prepare the vanilla pudding by mixing the cold milk and the vanilla powder.  Whisk until well blended.  Gently stir in 1/2 cup of Cool Whip and let set for five minutes.  Top the bottom half of each mini with enough pudding to make a thick layer (about 2-3 tablespoons)

Set the minis aside and prepare the chocolate topping by putting the chocolate squares into a microwaveable bowl along with a cup of Cool Whip.  Microwave for about 1 - 1 1/2 minutes until chocolate is almost melted.  Remove from microwave and stir until the mixture is completely blended.  Let stand for 15 minutes to thicken.

Spread the chocolate over each mini, refrigerate for at least 15 minutes before serving

YUUUUUUUUUUUUUUUUMMMMM, these were a HIT and oh so easy to make.  At least that's what it looked like. Great job Elise!!!  You gone done it again and have made me so proud :)

1 tbsp. white sugar
1 tsp. lemon juice
1/8 tsp. salt
3 apples, peeled, cored and diced
1 cup thinly sliced celery
1/2 cup chopped walnuts
1/2 cup raisins (optional)

In a medium bowl, whisk together the mayonnaise, sugar,  lemon juice and salt.  Then stir in the apples, celery, walnuts and the raisins.  Chill until ready to serve

So proud of the fantastic cook she's become.

For those who love Waldorf Salad, they said this one was the best.  "It was so tasty" as one fan put it.  

These two recipes were one of the few items we served at our Super Bowl party.  I mentioned before that it's a tradition at our home to make popular foods representing both teams.  Obviously the Boston Creme Pie Minis represent the New England Patriots and the Waldorf Salad represents the New York Giants.  This was a fun Super Bowl to cook for!!  Too bad the outcome wasn't what we wanted.  We still had a good time and look forward to next year's game (I pray it's Mexican food though)
