1/4 cup melted butter
24 mini dinner rolls
Enough lettuce for each roll
1 - 1 1/2 lbs. cooked lobster
1/4 cup mayonnaise (good quality kind)
1 tsp. fresh lime juice
1 dash hot Tabasco sauce
2 green onions, chopped
1 stalk celery, chopped
Salt and pepper to taste
Dash of dried basil, parsley or tarragon
Split the rolls, butter them and toast just until they're slightly browned. Set aside.
Dice the lobster. Do you know how hard . . . . HOW HARD it was to resist the temptation to want to dip these lovely pieces of lobster into some hot butter??? Instead I popped a few into my mouth :) Set aside.
In a medium bowl, stir together the mayonnaise, lime juice, Tabasco sauce, salt and pepper until well blended. Mix in the onion, celery and the basil.
Lightly mix in the lobster, so it just gets coated without falling apart.
Add two tablespoons of the lobster mixture to the bottom of a roll, top with a piece of lettuce and finish with the top half of the roll. Repeat with the rest of the rolls.
This is another NE Patriot dish we served at our Super Bowl XLVI shindig. The original recipe asked for e sub size sandwich bread and we just didn't think that would be feasible for our get together, so Elise came up with the idea to make them into individual rolls. We bought the lobster at a local seafood shop. Hopefully you can buy fresh lobster near your home too. This was so easy to make and put together. I love lobster but I have never cooked it before. I've only touched it when I've eaten it at a restaurant. Just so you know, there's no way I will ever buy a live lobster and cook him..... I just couldn't bare it. Anyway, because it was already cooked (steamed?) all I had to do was chop the meat and mix it into the sauce. So, so good and can't wait to make more next year....hopefully the Patriots will make it to the Super Bowl again.
